Chicken salad wraps are a great lunch item for work if you have a fridge. It’s filing, easy to store and put together later. I like them with thin slices of radishes (salt and peppered)!
I like fresh chicken, particularly rotisserie chicken. I love the flavors. So it is my go to for most recipes that call for cooked/ shredded/ diced chicken. But if you prefer canned chicken feel free to use it.
I start with a roasted chicken and shred it as fine as I can.
2 cups shredded whole roasted chicken
1/8 cup finely minced red onion
1/2 teaspoon yellow mustard
1/2 teaspoon dill weed
1/4 teaspoon dried garlic
1/4 teaspoon onion powder
1/2 teaspoon coarse ground black pepper
1 cups whole fat mayo
1/8 teaspoon salt
Lettuce for Wraps (I used Romaine, Butter, Iceberg and Boston are also good)
Put all of your ingredients in a bowl and mix well until the spices are mayo are thoroughly incorporated.
When chicken salad is finished you can wrap it in lettuce, surve it on a keto friendly bread or with keto friendly crackers. It’s also marvelous in an avocado (halved with the pit removed) or in a boiled egg as a replacement for the deviled yolks.
